Cut sheets:

These cut sheets are used by the butcher and packing staff during processing. We ask that all customers use these sheets when turning in cutting instructions.
Cut sheets should be completed prior to or upon drop-off with our Data Manager.

We are NOT responsible for misinterpretation of your cut sheet should your instructions be unclear or we take them over the phone. 
*If not stated, steaks will be cut to ¾” and roasts will be portioned.
**If an item is not marked, it will be understood you do not want that cut and it will be put into ground.
***If your instructions are unclear, we will make the best decision for the integrity of your carcass and the cuts possible.

​Notes on Beef Processing:
*Please specify the # of packs you want for Stew and Tips. We will do our best to meet those requests, but will stop cutting them when the quality starts to fade (get grisly).

*If ordering hamburger patties, please tell us the number of packs you would like OR the % of your ground beef that you want turned into patties.

*The more cuts you get, the higher your take-home percentage will be.

*All hamburger cows will yield the least amount due to trimming fat caps, etc. prior to grinding.

*The four ground options at the bottom come in 25lb increments. This is due to the seasoning packets being measured for 25lbs. We like to keep to manufacturers recommendations in order to give you the best quality.

Notes on Pork Processing:
*If you process multiple hogs at a time, please let us know if we can mix the grind. This allows us to make a better mix as well as produce more flavors for you.

*If you do not have enough grind to make a 25lb batch of bratwurst or breakfast links, we will put that grind into your 1lb portions.
