After growing up on a cattle farm, Carl Mitchell received a bachelor's degree in Zoology, a Master's Degree in Science Ed, and a Master's in Leadership. He continues to farm beef and pork and has come to us from his previous position of Director of Cooperative Extension and Livestock Agent for Stokes County. Carl uses his background to provide consulting services with our farmers, coach our animal handlers, work with community partners to increase locally grown beef in establishments, and improve processes and procedures to provide the best quality product for our customers. ​

Kristi Mitchell was a public school administrator in Stokes County and current beef farmer. She uses her Master's Degree in Leadership as well as her five years of experience in school administration to streamline processes, ensure required Federal Mandates are met, confirm Animal Welfare practices are followed, and maintain high standards so every animal that comes through is processed with care from harvesting to packaging.

Zev Flinchum
​Lead Butcher

​Zev came to us fresh out of high school as a meat packer, grew to learn the cut table, and has been running the small animal room on his own since July 2021.

Zev took over the Lead Butcher position in July 2022 and has done an excellent job! He is an artist with his knife skills and he has earned the respect from everyone in the processing room. He is clean, consistent, and takes time to make sure cuts are done correctly. He also has the best interest of the customers, the integrity of the carcasses, and the well-fare of the staff on his mind at all times.

We are so proud of the growth he has made since he started and had are so happy to see how much our entire staff has grown under his calm, positive leadership!

Quality Control Manager

Kymbre joined our team in March 2022 and has quickly worked her way up from cutting trim meats to running the small animal room - table to rack - including all of the HACCP Paperwork involved as well! She now holds the position of Quality Control Manger. In this position, she monitors the goings on in the processing rooms - positioning staff where they are the best asset during each production day, creating a Standard Packaging Procedure for consistency for your end consumers, checking the end-of-line packaging/racking to ensure correctness, as well as assisting with customer service.

In addition, Kymbre has created and implemented
Cut Breakdown and Percentage Spreadsheet for you! We are proud to provide this detailed information for you to help with production practices as you move forward with your herds!
