Kristi Mitchell
Owner Email: kristi@mitchellsmeatnc.com Kristi Mitchell was a public school administrator in Stokes County and current beef and pork farmer. She uses her Master's Degree in Leadership as well as her five years of experience in administration to streamline processes, ensure required Federal Mandates are met, confirm Animal Welfare practices are followed, and maintain high standards so every animal that comes through is processed with care from harvesting to packaging. Carl Mitchell Chief of Operations Email: carl@mitchellsmeatnc.com After growing up on a cattle farm, Carl Mitchell received a bachelor's degree in Zoology, a Master's Degree in Science Ed, and a Master's in Leadership. He continues to farm beef and pork and has come to us from his previous position of Director of Cooperative Extension and Livestock Agent for Stokes County. Carl uses his background to provide consulting services with our farmers, coach our animal handlers, work with community partners to increase locally grown beef in establishments, and improve processes and procedures to provide the best quality product for our customers. |

Zev Flinchum
Lead Butcher
Zev came to us fresh out of high school as a meat packer, grew to learn the cut table, and has been running the small animal room on his own since July 2021. Over the last three months, he has done an excellent job learning to lead the beef room, growing in his skills, and earning respect from everyone in the room. He is clean, consistent, and takes time to make sure cuts are done correctly. He also has the best interest of the customers, the integrity of the carcasses, and the well-fare of the staff on his mind at all times. We are so proud of the growth he has made since he started and cannot wait to see how much our entire staff grows under his calm, positive leadership!

Lucas Covington
New Hire Trainer/Training Program Liaison Lucas grew up in Stokes County, NC, graduating from South Stokes High School in 2018. After high school, he went on to NC State University to graduate with Bachelor's of Science in Agriculture Business in 2022. Lucas has worked for us during his winter and summer breaks since 2019. He has learned all of the positions in the harvest room and is also fully trained to lead the processing room as the butcher if needed. Because of his wealth of knowledge about this business, the positions within, and his collegiate background, he has joined us as New Hire Trainer. He will also be working as our liaison with Forsyth Technical Community College and NC State to develop a Meat Processor Training Certificate Program. This program, when finalized, will allow us to partner with these educational entities as they give classroom instruction on ServSafe, OSHA, HACCP, etc and we provide "on the table" experience to those wishing to go into the meat cutting industry - giving the participants a leg up going into the workforce.
